Avo Spud

  • 1 large white potato, baked
  • ½ ripe avocado
  • 1 teaspoon dried parsley
  • sea salt and freshly ground black pepper


  • Step 1

    Scoop out the potato flesh into a bowl and mash it with the avocado.

  • Step 2

    Mix in the dried parsley, salt and pepper, then return the mashed filling to the potato skins and serve. Yum!
