K.I.S.S loaded sweet potato

This recipe was brought to you by Dr. Garth Davis, writer of the book “Proteinaholic”. 

I’ve since met Dr Davis and heard him speak a couple of times. He’s straight down the line, pulls no punches and is happy to take up the fight against nutritional misinformation. He’s a bariatric surgeon who deeply cares for the health of his patients, and always encourages lifestyle-based intervention instead of, or in conjunction with, surgery. If all that wasn’t enough, he walks the walk with the best of them, having completed several Iron Man Triathlons (he’d comfortably sit alongside the athletes in this book too).

Ingredients

  • 1 x 400 g (14 oz) tin black beans, drained
  • 2–3 tablespoons pico de gallo (or to taste)
  • ¼ avocado
  • large handful of chopped baby spinach
  • 1 baked sweet potato
  • hot sauce, to taste

Instructions

  • Step 1

    Pile it all up on a baked sweet potato. That’s it! Boring. But effective!
