January the 1st 2020 marks four years to the day since I began my original ‘Spud Fit Challenge’ - ONE FULL YEAR  of eating nothing but potatoes

 

The above scenarios aren't imaginary - they are all things I personally experienced in ever-increasing proportions over the course of that year. EVERYTHING changed for me, physically and mentally.
